- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup spinach
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried basil
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions. Drain and set aside.
- In a bowl, mix ricotta cheese, egg, salt, pepper, and basil.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place 3 lasagna noodles on top of the sauce.
- Spread half of the ricotta mixture over the noodles.
- Layer zucchini, bell pepper, and spinach on top.
- Sprinkle 1 cup of mozzarella cheese.
- Repeat layers: sauce, noodles, ricotta, vegetables, and cheese.
- Top with the remaining noodles, sauce, mozzarella, and Parmesan cheese.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for 10 more minutes until golden.
- Let cool for 10 minutes before serving.
Notes
- You can substitute vegetables with your favorites, like mushrooms or eggplant.
- For a crispier top, broil for 2-3 minutes after baking.
- Let the lasagna rest before cutting to keep layers intact.
