Description
A hearty beef casserole made with tender beef, vegetables, and rich gravy.
Ingredients

- 500g beef, cubed
- 2 onions, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups beef stock
- 1 tbsp flour
- 1 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 180°C (350°F).
- Heat oil in a pan and brown the beef cubes. Remove and set aside.
- Sauté onions and garlic until soft.
- Add carrots and potatoes, cook for 5 minutes.
- Stir in tomato paste and flour.
- Pour in beef stock and bring to a simmer.
- Return beef to the pan, add thyme, salt, and pepper.
- Transfer to a casserole dish and bake for 1.5 hours.
- Serve hot.
Notes
- Use a slow cooker for tender meat.
- Add mushrooms for extra flavor.
- Freeze leftovers for later.
