A hearty and flavorful Tuscan beef casserole that’s perfect for a comforting meal.
Ingredients

- 500g beef stew meat
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 400g canned tomatoes
- 250ml beef stock
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and cook until browned. Remove and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Return beef to the pot. Add tomatoes, beef stock, rosemary, and thyme.
- Bring to a simmer, then cover and cook for 1.5 hours.
- Season with salt and pepper before serving.
Notes
- You can use fresh herbs if available.
- Serve with crusty bread or mashed potatoes.
