Description

A hearty and flavorful Tuscan beef casserole that’s perfect for a comforting meal.


Ingredients

Scale
  • 500g beef stew meat
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 400g canned tomatoes
  • 250ml beef stock
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and cook until browned. Remove and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Return beef to the pot. Add tomatoes, beef stock, rosemary, and thyme.
  6. Bring to a simmer, then cover and cook for 1.5 hours.
  7. Season with salt and pepper before serving.

Notes

  • You can use fresh herbs if available.
  • Serve with crusty bread or mashed potatoes.
