Ingredients

- 1 cup wild rice
- 2 cups cooked turkey, shredded
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and thyme. Cook for 1 minute.
- Add wild rice and chicken broth. Bring to a boil.
- Reduce heat and simmer for 45 minutes or until rice is tender.
- Add shredded turkey and season with salt and pepper.
- Simmer for 10 more minutes.
- Serve hot.
Notes
- Use leftover turkey for convenience.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
