Description

A hearty and nutritious soup made with turkey and wild rice, perfect for a comforting meal.


Ingredients

  • 1 cup wild rice
  • 2 cups cooked turkey, shredded
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and thyme. Cook for 1 minute.
  4. Add wild rice and chicken broth. Bring to a boil.
  5. Reduce heat and simmer for 45 minutes or until rice is tender.
  6. Add shredded turkey and season with salt and pepper.
  7. Simmer for 10 more minutes.
  8. Serve hot.
