Description

A delicious and healthy dish combining zucchini and tomatoes with a cheesy crust. Perfect for a light lunch or side dish.


Ingredients

  • 2 medium zucchinis, sliced
  • 2 large tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Layer zucchini and tomato slices in a baking dish.
  3. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper.
  4. Top with mozzarella and Parmesan cheese.
  5. Bake for 25-30 minutes until cheese is golden and bubbly.
  6. Let rest for 5 minutes before serving.
