A hearty Spanish beef stew packed with rich flavors and tender meat.
Ingredients

- 500g beef chuck, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 2 carrots, sliced
- 2 potatoes, cubed
- 400g canned tomatoes
- 500ml beef broth
- 1 tsp smoked paprika
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onion, garlic, and bell pepper to the pot. Cook until softened.
- Return beef to the pot with carrots, potatoes, tomatoes, beef broth, paprika, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5–2 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
- For extra flavor, sear the beef in batches.
- Use fresh herbs like parsley for garnish.
- Store leftovers in the fridge for up to 3 days.
