Description

A hearty Spanish beef stew packed with rich flavors and tender meat.


Ingredients

  • 500g beef chuck, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 400g canned tomatoes
  • 500ml beef broth
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onion, garlic, and bell pepper to the pot. Cook until softened.
  4. Return beef to the pot with carrots, potatoes, tomatoes, beef broth, paprika, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5–2 hours until beef is tender.
  6. Season with salt and pepper before serving.

Notes

  • For extra flavor, sear the beef in batches.
  • Use fresh herbs like parsley for garnish.
  • Store leftovers in the fridge for up to 3 days.
