Description

A rich and flavorful beef curry made in a slow cooker with coconut milk, spices, and tender beef.


Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 1 can (14 oz) coconut milk
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup beef broth
  • 1 tbsp lime juice
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat oil in a pan over medium heat. Brown the beef cubes for 3-4 minutes, then transfer to the slow cooker.
  2. In the same pan, sauté onion, garlic, and ginger until soft. Add curry powder, turmeric, cumin, and coriander, stirring for 1 minute.
  3. Pour in coconut milk, beef broth, fish sauce, and brown sugar. Stir well and bring to a simmer.
  4. Transfer the mixture to the slow cooker with the beef. Stir to combine.
  5. Cook on low for 6-7 hours or on high for 3-4 hours until the beef is tender.
  6. Stir in lime juice and adjust salt to taste before serving.

Notes

  • For extra heat, add chopped chili peppers.
  • Serve with rice or naan bread.
  • Leftovers can be stored for up to 3 days.
