Description
A healthy and nutritious quinoa salad packed with fresh vegetables and a zesty dressing.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a saucepan, bring water or vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes. Fluff with a fork and allow to cool.
- In a large bowl, combine quinoa, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Add feta cheese or avocado for extra flavor.
- Substitute quinoa with couscous or bulgur if preferred.
