Description
Persian Jeweled Rice is a fragrant and colorful dish made with basmati rice, nuts, dried fruits, and aromatic spices.
Ingredients

- 2 cups basmati rice
- 4 cups water
- 1/2 cup slivered almonds
- 1/2 cup pistachios
- 1/2 cup dried barberries
- 1/2 cup golden raisins
- 1 large onion, thinly sliced
- 1/4 cup olive oil
- 1 tsp saffron threads
- 1 tsp ground cumin
- 1 tsp ground cardamom
- 1 tsp salt
Instructions
- Rinse rice until water runs clear, then soak for 30 minutes.
- Heat oil in a pot and sauté onions until golden.
- Add spices and cook for 1 minute.
- Drain rice and add to the pot with water.
- Bring to a boil, then reduce heat and simmer covered for 15 minutes.
- Toast nuts and dried fruits in a pan.
- Fluff rice and mix in half of the nuts and fruits.
- Garnish with remaining nuts and fruits before serving.
Notes
- Soaking rice ensures fluffy texture.
- Adjust sweetness by reducing raisins.
- Barberries can be substituted with cranberries.
