Description

Persian Jeweled Rice is a fragrant and colorful dish made with basmati rice, nuts, dried fruits, and aromatic spices.


Ingredients

Scale
  • 2 cups basmati rice
  • 4 cups water
  • 1/2 cup slivered almonds
  • 1/2 cup pistachios
  • 1/2 cup dried barberries
  • 1/2 cup golden raisins
  • 1 large onion, thinly sliced
  • 1/4 cup olive oil
  • 1 tsp saffron threads
  • 1 tsp ground cumin
  • 1 tsp ground cardamom
  • 1 tsp salt

Instructions

  1. Rinse rice until water runs clear, then soak for 30 minutes.
  2. Heat oil in a pot and sauté onions until golden.
  3. Add spices and cook for 1 minute.
  4. Drain rice and add to the pot with water.
  5. Bring to a boil, then reduce heat and simmer covered for 15 minutes.
  6. Toast nuts and dried fruits in a pan.
  7. Fluff rice and mix in half of the nuts and fruits.
  8. Garnish with remaining nuts and fruits before serving.

Notes

  • Soaking rice ensures fluffy texture.
  • Adjust sweetness by reducing raisins.
  • Barberries can be substituted with cranberries.
