Ingredients

- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 1/4 cup sour cream
- 2 tablespoons chopped chives
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F (200°C).
- Scrub potatoes and pat dry.
- Rub potatoes with olive oil and sprinkle with salt and pepper.
- Place potatoes on a baking sheet and bake for 45-60 minutes until tender.
- Remove from oven and let cool slightly.
- Cut a slit in the top of each potato and fluff the insides with a fork.
- Add butter, sour cream, chives, and cheese.
- Serve warm.
Notes
- For crispier skin, pierce potatoes with a fork before baking.
- Top with bacon bits or jalapeños for extra flavor.
- Store leftovers in the fridge for up to 3 days.
