Description

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 1/4 cup sour cream
  • 2 tablespoons chopped chives
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pat dry.
  3. Rub potatoes with olive oil and sprinkle with salt and pepper.
  4. Place potatoes on a baking sheet and bake for 45-60 minutes until tender.
  5. Remove from oven and let cool slightly.
