Description
Musakhan is a traditional Palestinian dish featuring spiced roasted chicken and potatoes on flatbread. It’s a flavorful one-pan meal with warm spices and caramelized onions.

- 1 whole chicken (about 3–4 lbs), cut into pieces
- 4 large potatoes, sliced into wedges
- 2 large onions, thinly sliced
- 1/4 cup olive oil
- 2 tbsp sumac
- 1 tsp ground cumin
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp black pepper
- 1 tsp salt
- 2 large pieces of taboon or pita bread
- 1/4 cup pine nuts (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Mix chicken with 2 tbsp olive oil, sumac, cumin, allspice, cinnamon, pepper, and salt.
- In a separate bowl, toss potatoes with 1 tbsp olive oil and a pinch of salt.
- Spread bread on a large baking sheet.
- Layer onions over the bread, then arrange chicken pieces on top.
- Place potato wedges around the chicken.
- Drizzle with remaining olive oil.
- Bake for 45-50 minutes until chicken is cooked through.
- Sprinkle with pine nuts before serving.
Notes
- Sumac is essential for authentic flavor.
- Chicken can be marinated for 2 hours for deeper flavor.
- If using store-bought pita, lightly toast it first.
