A creamy and spicy side dish combining sweet corn with jalapeño popper flavors.
Ingredients

- 4 cups corn kernels (fresh or frozen)
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 2 jalapeños, seeded and diced
- 4 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large skillet, cook corn over medium heat until warmed.
- Add cream cheese and sour cream, stirring until melted.
- Mix in cheddar cheese, jalapeños, bacon, green onions, garlic powder, salt, and pepper.
- Cook for 5 minutes, stirring occasionally.
- Serve warm.
Notes
- Adjust jalapeño amount based on spice preference.
- Can be made ahead and reheated.
- For extra crunch, top with additional bacon.
