This Cream Cheese Cake is soft, moist, and rich with a delicate tang from cream cheese. Made with simple pantry ingredients and no butter, it’s easy to mix up in one bowl. Finished with an optional sweet glaze, it’s the perfect cake for everyday treats or special occasions.
Ingredients
For the Cake:
-
8 oz cream cheese, softened
-
1/2 cup vegetable oil
-
1 cup granulated sugar
-
3 large eggs
-
1 teaspoon vanilla extract
-
1 1/2 cups all-purpose flour
-
1 teaspoon baking powder
-
1/4 teaspoon salt
For the Glaze (optional):
-
1/4 cup powdered sugar
-
1–2 tablespoons milk or cream
Instructions
-
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
-
In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and continue beating until fully combined.
-
Beat in the eggs one at a time, then stir in the vanilla extract.
-
In a separate bowl, whisk together the flour, baking powder, and salt.
-
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Avoid overmixing.
-
Pour the batter into the prepared springform pan and bake for 30–35 minutes, or until a wooden skewer inserted into the center comes out clean.
-
Let the cake cool completely in the pan on a wire rack before removing the sides of the pan.
-
Optional: In a small bowl, whisk together the powdered sugar and milk/cream until smooth. Drizzle over the cooled cake.
Notes
-
Use full-fat cream cheese for a richer, creamier texture.
-
Optional Add-ins: 1 cup chopped nuts, 1/2 cup chocolate chips, or 1 cup berries (fresh or frozen).
-
For a no-bake version, chill the cake for at least 4 hours until set.
