Ingredients

- 1 red bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, cut into wedges
- 8 oz mushrooms, whole or halved
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
Instructions
- Preheat grill to medium-high heat.
- Thread vegetables onto skewers, alternating types.
- Brush skewers with olive oil and sprinkle with salt, pepper, and garlic powder.
- Grill for 8-10 minutes, turning occasionally, until veggies are tender and slightly charred.
- Remove from grill and serve immediately.
Notes
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Use any vegetables you prefer.
- Serve with a side of tzatziki or hummus.
