Description

Grilled Veggie Skewers are a quick and healthy dish packed with fresh vegetables. Perfect for BBQs or a light meal.


Ingredients

  • 1 red bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, cut into wedges
  • 8 oz mushrooms, whole or halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Preheat grill to medium-high heat.
  2. Thread vegetables onto skewers, alternating types.
  3. Brush skewers with olive oil and sprinkle with salt, pepper, and garlic powder.
  4. Grill for 8-10 minutes, turning occasionally, until veggies are tender and slightly charred.
  5. Remove from grill and serve immediately.

Notes

  • Soak wooden skewers in water for 30 minutes to prevent burning.
