Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil

- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp balsamic vinaigrette
Instructions
- Preheat the grill to medium-high heat.
- Rub chicken breasts with olive oil, salt, and black pepper.
- Grill chicken for 6-7 minutes per side until fully cooked.
- Let the chicken rest for 5 minutes, then slice it.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, and red onion.
- Top with sliced chicken and crumbled feta cheese.
- Drizzle with balsamic vinaigrette and toss gently before serving.
Notes
- You can use any salad dressing of your choice.
- Add avocado or nuts for extra texture.
