Description

A fresh and flavorful Greek pasta salad with crisp vegetables, tangy feta cheese, and a bright lemon dressing.


Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine tomatoes, cucumber, red onion, olives, and feta cheese.
  3. Add the cooled pasta to the bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill for at least 30 minutes before serving.

Notes

  • Use whole wheat pasta for extra fiber.
