Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup diced mango
- 1 cup diced strawberries
- 1/2 cup blueberries
- 1/4 cup chopped mint leaves
- 2 tbsp honey
- 1 tbsp lime juice

Instructions
- Cook quinoa in water according to package instructions. Let it cool.
- In a large bowl, combine cooled quinoa, mango, strawberries, and blueberries.
- In a small bowl, whisk honey, lime juice, and salt.
- Drizzle dressing over the salad and toss gently.
- Sprinkle chopped mint leaves on top before serving.
