Description

A refreshing cold salad perfect for warm days.


Ingredients

Scale
  • 2 cups mixed greens
  • 1 cucumber, sliced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olives
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens.
  2. Slice the cucumber and dice the tomato.
  3. Thinly slice the red onion.
  4. Combine all vegetables in a large bowl.
  5. Add olives and crumbled feta cheese.
  6. Drizzle with olive oil and lemon juice.
  7. Season with salt and pepper.
  8. Toss gently to combine.
  9. Serve chilled.

Notes

  • Can be stored in the fridge for up to 2 days.
  • Add avocado for extra creaminess.
  • Replace feta with goat cheese if preferred.
