Ingredients

  • 2 large cucumbers, sliced
  • 4 medium tomatoes, diced
  • 1/2 red onion, thinly sliced

  • 1 tbsp lemon juice

Instructions

  1. Wash and slice cucumbers.
  2. Dice tomatoes and slice red onion.
  3. Combine cucumbers, tomatoes, and onion in a bowl.
  4. Add olive oil, lemon juice, salt, and pepper.
  5. Toss gently until evenly coated.
  6. Sprinkle with fresh parsley.
  7. Serve chilled.
