Ingredients

- 1 cucumber, diced
- 1 red bell pepper, diced

- Salt and pepper to taste
Instructions
- Rinse and drain chickpeas.
- Chop cucumber, bell pepper, red onion, and parsley.
- Combine chickpeas and chopped vegetables in a bowl.
- Whisk olive oil, lemon juice, cumin, salt, and pepper in a small bowl.
- Pour dressing over salad and toss gently.
- Serve chilled.
