- 4 chicken thighs
- 1 can pumpkin beer (12 oz)
- 1 cup pumpkin puree
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a pan and brown chicken thighs on both sides.
- Place browned chicken in the crockpot.
- Add diced onion, minced garlic, pumpkin puree, pumpkin beer, salt, pepper, smoked paprika, and thyme.
- Cover and cook on low for 6 hours or high for 3 hours.
- Garnish with fresh parsley before serving.
Notes
- Use boneless chicken thighs for quicker cooking.
- Adjust seasoning to taste.
