- 8 oz pasta
- 1 cup cherry tomatoes
- 1/2 cup ricotta cheese
- 2 cloves garlic
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh basil
Instructions
- Preheat oven to 400°F.
- Toss tomatoes with olive oil, salt, and pepper. Roast for 20 minutes.
- Cook pasta according to package directions.
- Mix ricotta with roasted tomatoes and cooked pasta.
- Garnish with fresh basil.
