Description

A comforting bowl of creamy homestyle chicken noodle soup packed with tender chicken, vegetables, and egg noodles.


Ingredients

  • 2 tbsp butter
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups water
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 lb boneless chicken breast, cubed
  • 8 oz egg noodles
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and water. Add thyme and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add chicken and cook for 10 minutes.
  7. Stir in egg noodles and cook until tender.
  8. Pour in heavy cream and simmer for 5 minutes.
  9. Season with salt and pepper.
  10. Remove bay leaf before serving.

Notes

  • Use rotisserie chicken for quicker prep.
  • Store leftovers in the fridge for up to 3 days.
  • Freeze without noodles for longer storage.
