A comforting bowl of creamy homestyle chicken noodle soup packed with tender chicken, vegetables, and egg noodles.
Ingredients

- 2 tbsp butter
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups water
- 1 tsp dried thyme
- 1 bay leaf
- 1 lb boneless chicken breast, cubed
- 8 oz egg noodles
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and water. Add thyme and bay leaf.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add chicken and cook for 10 minutes.
- Stir in egg noodles and cook until tender.
- Pour in heavy cream and simmer for 5 minutes.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- Use rotisserie chicken for quicker prep.
- Store leftovers in the fridge for up to 3 days.
- Freeze without noodles for longer storage.
