Description

A simple and delicious chicken pasta dish that’s quick to prepare, perfect for a family dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add chicken and cook until no longer pink, about 6-7 minutes per side. Remove and slice.
  3. In the same pan, add garlic and sauté for 30 seconds. Add cherry tomatoes and cook for 2 minutes.
  4. Pour in heavy cream, then add parmesan, basil, salt, and pepper. Stir until the sauce thickens slightly.
  5. Add cooked pasta and sliced chicken to the pan. Toss to coat evenly.
  6. Garnish with fresh parsley before serving.

  • Use whole wheat pasta for a healthier option.
  • Replace heavy cream with milk for a lighter sauce.
  • Add spinach or mushrooms for extra vegetables.
