A simple and healthy cabbage soup recipe perfect for a light meal or detox.
Ingredients

- 1 medium cabbage, chopped
- 2 carrots, sliced
- 1 onion, diced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add cabbage, tomatoes, vegetable broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot.

- Store leftovers in an airtight container for up to 3 days.
