- 1 lb fresh spinach, washed and trimmed
- 2 shallots, thinly sliced
- 2 tbsp butter
- 1 cup heavy cream
- 1/4 tsp nutmeg
- Salt and pepper to taste
- 2 tbsp vegetable oil for frying
Instructions
- Heat oil in a pan and fry shallots until golden brown. Remove and drain on paper towels.
- In the same pan, melt butter and sauté spinach until wilted.
- Add heavy cream and nutmeg. Simmer until slightly thickened.
- Season with salt and pepper.
- Top with fried shallots before serving.
Notes
- Use fresh spinach for best results.
- Shallots can be substituted with onions if needed.
