Ingredients
Scale
- 4 cups kale, chopped
- 1 orange, peeled and sliced
- 1 grapefruit, peeled and sliced
- 1/4 cup almonds, sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt to taste
- Pepper to taste
Instructions
- Wash and dry the kale thoroughly.
- Remove the stems and chop the leaves into small pieces.
- Peel and slice the orange and grapefruit into segments.
- Toast the almonds lightly in a dry pan.
- Whisk together olive oil, lemon juice, honey, salt, and pepper.
- Toss kale with the dressing until well coated.
- Add citrus slices and almonds.
- Serve immediately.

- Massage kale with dressing for softer texture.
- Store leftovers in an airtight container for up to 2 days.
- Swap almonds for walnuts or sunflower seeds.
