Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, and red onion.
- Add crumbled feta cheese.
- Drizzle with olive oil and lemon juice.
- Sprinkle with oregano, salt, and pepper.
- Toss gently to mix.
- Serve immediately or refrigerate for 30 minutes.
Notes
- For extra flavor, add chopped parsley or mint.
- Use canned or cooked chickpeas.
- Adjust lemon juice and salt to taste.
