Description

A refreshing and protein-packed salad with chickpeas, feta, and fresh vegetables.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, and red onion.
  2. Add crumbled feta cheese.
  3. Drizzle with olive oil and lemon juice.
  4. Sprinkle with oregano, salt, and pepper.
  5. Toss gently to mix.
  6. Serve immediately or refrigerate for 30 minutes.

Notes

  • For extra flavor, add chopped parsley or mint.
  • Use canned or cooked chickpeas.
