Description
A refreshing carrot cucumber salad that’s easy to make and packed with nutrients.
Ingredients

- 2 large carrots, grated
- 1 cucumber, thinly sliced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Wash and peel the carrots and cucumber.
- Grate the carrots and slice the cucumber thinly.
- In a bowl, mix the carrots and cucumber.
- Add olive oil, lemon juice, salt, and black pepper.
- Toss well to combine.
- Sprinkle chopped parsley on top before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 2 days.
- Add a pinch of chili flakes for extra spice.
- Use a mandoline for even cucumber slices.
