Description

A refreshing carrot cucumber salad that’s easy to make and packed with nutrients.


Ingredients

Scale
  • 2 large carrots, grated
  • 1 cucumber, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Wash and peel the carrots and cucumber.
  2. Grate the carrots and slice the cucumber thinly.
  3. In a bowl, mix the carrots and cucumber.
  4. Add olive oil, lemon juice, salt, and black pepper.
  5. Toss well to combine.
  6. Sprinkle chopped parsley on top before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Add a pinch of chili flakes for extra spice.
  • Use a mandoline for even cucumber slices.
