Description

A fresh and nutritious salad combining broccoli and chickpeas for a healthy meal.


Ingredients

  • 2 cups broccoli florets
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup red onion, diced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Chop the broccoli into small florets.
  2. Drain and rinse the chickpeas.
  3. Dice the red onion.
  4. In a large bowl, combine broccoli, chickpeas, and red onion.
  5. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  6. Pour the dressing over the salad and toss to coat.
  7. Serve immediately or refrigerate for 30 minutes for better flavor.
