Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Rinse the black-eyed peas and soak them overnight.
  2. Drain the peas and add them to a pot with 4 cups of water.
  3. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. In a skillet, heat olive oil and sauté onion, garlic, and bell pepper until soft.
  5. Add the sautéed vegetables to the pot with the peas.
  6. Season with salt and black pepper.
  7. Simmer for another 15-20 minutes until the peas are tender.
  8. Serve hot.
