- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas and soak them overnight.
- Drain the peas and add them to a pot with 4 cups of water.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- In a skillet, heat olive oil and sauté onion, garlic, and bell pepper until soft.
- Add the sautéed vegetables to the pot with the peas.
- Season with salt and black pepper.
- Simmer for another 15-20 minutes until the peas are tender.
- Serve hot.
Notes
- Soaking the peas overnight reduces cooking time.
- You can add smoked turkey or ham for extra flavor.
