Description

A hearty beef stew with a rich, savory beer-based sauce, perfect for cold days.


Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups dark beer
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot and brown the beef on all sides. Remove and set aside.
  2. Add onions and garlic to the pot, cook until softened.
  3. Stir in flour and cook for 1 minute.
  4. Pour in beer, beef broth, brown sugar, and vinegar. Stir well.
  5. Return beef to the pot, add thyme and bay leaf. Season with salt and pepper.
  6. Simmer on low heat for 2 hours, stirring occasionally.
  7. Remove bay leaf before serving.

Notes

  • Use a dark beer for deeper flavor.
  • Serve with crusty bread or mashed potatoes.
  • Leftovers taste even better the next day.
