- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/2 cup corn kernels
- 1/2 cup black beans, rinsed
- 1/4 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or skillet to medium-high heat.
- Season chicken breasts with salt and pepper, then coat with BBQ sauce.
- Grill chicken for 6-7 minutes per side until cooked through.
- Remove chicken, let rest for 5 minutes, then slice.
- In a large bowl, combine lettuce, tomatoes, red onion, avocado, corn, and black beans.
- Top salad with sliced chicken and shredded cheese.
- Drizzle with ranch dressing and serve.
Notes
- Use leftover grilled chicken for quicker prep.
- Swap ranch dressing with blue cheese if preferred.
- Add crumbled bacon for extra flavor.
