Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup corn kernels
  • 1/2 cup black beans, rinsed
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Season chicken breasts with salt and pepper, then coat with BBQ sauce.
  3. Grill chicken for 6-7 minutes per side until cooked through.
  4. Remove chicken, let rest for 5 minutes, then slice.
  5. In a large bowl, combine lettuce, tomatoes, red onion, avocado, corn, and black beans.
