- 1 lb shrimp, peeled and deveined
- 2 medium zucchini, spiralized into noodles
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add shrimp, salt, black pepper, and red pepper flakes. Cook for 2-3 minutes per side until shrimp turns pink.
- Add zucchini noodles and lemon juice. Toss gently and cook for 2 minutes until noodles soften slightly.
- Remove from heat, garnish with parsley, and serve immediately.
Notes
- Use pre-spiralized zucchini noodles for faster prep.
- Adjust red pepper flakes for desired spice level.
